It was 1998 when brothers Andy and Mateo Kehler, along with their wives, Victoria and Angie, decided to take the risk and spend their life savings to build a unique artisan cheese business from scratch. Their newly acquired rocky hillside farm, locally known as “the old Jasper Hill farm,” did not appear to have much potential at first glance. Situated in Vermont’s Canadian border in Greensboro village, the family’s long-term summer destination became their forever home.
Greensboro, with the breathtaking Caspian Lake and a population of just 780 people that decreases even more each year, does not offer many choices to the locals. The high housing prices, the town’s privileged (most of them seasonal) residents’ gatekeeping, and their refusal to create opportunities and an affordable life for the working class make Greensboro an unattractive option to people. Plus, the unpredictable climate and extremes each year challenge the farmers.
The Kehlers made it their mission to change that. They wanted to create a small dairy business that would generate job opportunities and produce high-quality milk products. All so that people would think differently about rural Vermont, and what was possible there.
Starting Out
The Kehlers spent 5 years developing all the skills and infrastructures needed to live on the farm and produce cheese comparable to the best imported, traditional European varieties. It took many failed attempts at cheesemaking before they got the consistency and taste they were looking for. In 2003, they sold their first products. It was hard work: they had to pasture and milk the cows, process the milk, produce the cheese, handle marketing, sales, packaging and sending their orders all on their own. But gradually, their brand began to make a name for itself. Their products gained popularity among many individual shops and restaurants.
One day, Cabot Creamery, a historical dairy cooperative made by family farms, proposed a partnership with the Jasper Hill Farm. Together, they produced a clothbound cheddar cheese that won the gold medal at the World Cheese Awards 2004. The brothers saw this success as an opportunity to further invest in their farm and expand their aging facilities by building cellars available for their neighbors and cooperatives. The modern design of these vaults ensures the perfect cheese ripening. The staff manages the cellars’ smooth operation and the aging process to achieve high-quality results.
French Cheese, Made in the USA
Jasper Hill Farm’s innovative cellars and cheese maturation facilities enable staff to focus on other process stages, including milk and cheesemaking. The primary ingredients are tastier compared to those produced by industries using more traditional aging methods. Their facilities, specifically the cellars, have become infamous in Vermont and used by many local cheesemakers. The French-style cheese aging-inspired cellars are so unconventional in the U.S.A. that they became viral in many local and international media platforms.
The practices, machinery, and regenerative agriculture methods they use promote eco-friendly dairy production. Their cows’ healthy diet consists of grain and hay harvested from local fields. Dry hay processed in the farm’s facilities, where the first hay-dryer in America operates, results in better flavor and the localization of the feed sources. Additionally, Jasper Hill Farm dedicates significant effort to rehabilitating the surrounding pastureland and local farming sustainability. Since the purchase of Andersonville in 2012, the additional land has been converted from corn production to a grazing cows field.
